No BBQ is complete without a juicy beef burger in one hand & a refreshing glass of cider in the other.
However, thanks to copious amount of salt and additives, store-bought burgers can be pretty unhealthy.
Fear not. Because we’ve created a super-simple recipe that’s going to take your next BBQ to whole new heights.
Not only does this burger switch the traditional bread bun for Portobello mushrooms, but it also ditches cheddar cheese in favour of Mozzarella, making it a low-calorie (but super-flavoursome) meal.
For 4 burgers, you’ll need:
- 500g minced beef
- 2 cloves of garlic, crushed
- 1 Tbsp ground cumin
- 8 Portobello mushrooms
- 1 tbsp olive oil
- Mozzarella ball
- Condiments/toppings of your choice.
First things first, place your minced beef in a bowl and add the crushed garlic and ground cumin. Mix well, season with a little salt and pepper, and then shape into four large and roughly equal balls.
Now, place the first ball in the palm of your hand and gently squeeze down until it’s around 3cm thick. Repeat this with the remaining three and then pop them on the BBQ for around 12 minutes, flipping them occasionally. Once 12 minutes are up, add a generous portion of mozzarella and leave to melt.
Whilst the burgers are cooking, grab your Portobello mushrooms and scrape out the gills. Now lightly brush each mushroom with olive oil, season with salt and pepper, and then place on the BBQ alongside your burgers. These should take roughly 10 minutes to cook.
Once everything is ready, all that’s left to do is construct your burger! Add a slice of lettuce and tomato, a dollop of tomato sauce… maybe even a wedge of avocado – it’s entirely up to you.
