Summer is well and truly underway, and for many of us, that means eating copious amounts of ice cream whilst sitting in the sunshine. Although tucking into a Magnum or Cornetto sounds like a dream come true, doing it regularly isn’t great news for the waist line.
That’s why we’ve put together our favourite ‘nice cream’ recipes for you to try out.
NOTE: just because they’re healthy, it doesn’t they are boring. These summer time treats are just as delicious as the real deal!
Cherry Nice Cream recipe
Serves 2-4 people (depending on how hungry you are)
Firstly, head to the supermarket and pick up a few bits. You’ll need:
- 500g plain yoghurt
- 5 tbsp chia seeds
- 350g frozen, pitted cherries
- 1 tbsp of a sweetener (try either honey, erythritol or maple syrup – you decide)
Firstly, soak the chia seeds in a bowl with the plain yoghurt for roughly 10-15 minutes.
Now all that’s left to do is throw all the ingredients into a blender and blitz. Either serve immediately or place in the freezer to firm up a little. Top with a bit of grated dark chocolate for that extra bit of flavour.
Raspberry and Banana Nice Cream
Serves 2-4 people (depending on how hungry you are)
Firstly, head to the supermarket and pick up a few bits. You’ll need:
- Bananas – you’ll need to peel these and place them in the freezer overnight
- 50g raspberries
- Juice from ¼ lemon
Place all the ingredients into a blender and blitz. Either serve immediately or place in the freezer to firm up a little. Now that’s an easy-peasy lemon squeezy recipe, right? Why not top with a squeeze of honey if you’ve got a sweet-tooth?
Choco-nana Nutty Nice Cream
Serves 2-4 people (depending on how hungry you are)
Firstly, head to the supermarket and pick up a few bits. You’ll need:
- 3 bananas – you’ll need to peel these and place them in the freezer overnight
- 2 tbsp cocoa powder
- 2 tbsp nut butter (peanut butter, almond butter, hazelnut butter – you decide)
Simply place the ingredients into a blender and blitz. Either serve immediately or place in the freezer to firm up a little. To spice this recipe up, why not add some chopped hazelnuts or pistachios for that extra flavour and a little crunch.
