How to swap carbs for cauliflower

Gone are the days when getting your ‘5 a day’ felt like mission impossible. Thanks to countless new and exciting recipes, it’s super-easy to substitute carbs for veg. So next time you’ve indulged in one too many treats, try ditching the potato, bread and rice in favour of some cauliflower.

Here’s how:

Cauliflower hash brown recipe

First of all, blitz ½ a cauliflower in a food processor (if you don’t have one of these, just grate it instead). Next, transfer the shredded cauliflower to a bowl and add an egg, ½ a chopped onion, a sprinkle of cheddar cheese and 3tbsp of corn-starch.

Once you’ve mixed it all together, season with salt and pepper.

Now, grab a frying pan and heat a splash of oil over a medium-high heat. Next, add a large spoonful of the cauliflower mixture to the pan and cook for approximately 5 minutes on each side (or until brown and crispy). Repeat this process with the rest of the cauliflower mixture and enjoy!

NOTE: by swapping the potato for cauliflower, hash browns can be a staple breakfast food with absolutely no guilt attached.

Cauliflower pizza recipe

Preheat the oven to 180 degrees.

Now start by blitzing a whole cauliflower in a food processor (if you don’t have one of these, just grate it instead) before placing in the microwave for 5 minutes (or until soft). 

Once the cauliflower has cooled, pour it onto a tea towel and squeeze out excess moisture.

After this, place it in a bowl and add an egg, a sprinkle of cheese, some Italian herbs and some salt and pepper. Once you’ve fully mixed this, place on a greased baking tray and shape into a round, flat shape and bake for 10 minutes. Remove from the oven and add toppings of your choice…Once you've added sufficient cheese and tomato, bake for a further 10 minutes and enjoy! 


Cauliflower rice recipe

Fancy curry this evening? Before you start boiling any rice, head to the shop and pick up a cauliflower. All you need to do is blitz it in a food processor (if you don’t have one of these, just grate it instead) before heating thoroughly in a frying pan.

NOTE: this cheap and healthy alternative to traditional rice will leave you feeling super-full without the bloat.
