Three baked eggs recipes worth getting out of bed for

Packed full of protein, vitamins and minerals, the humble egg is an incredibly nutritious (and delicious) breakfast choice. And the best part? They’re super-versatile, so whether you like them served alongside some ham, mushrooms, cheese or tomato, there’s a recipe out there for you!

We’ve gathered our favourite variations of baked eggs that are sure to inspire you!

1) Spinach and ham baked eggs

For 2 Servings, You’ll Need:

Since this recipe requires minimal ingredients and minimal effort, it’s perfect for those busy and hectic mornings.

Before you get cracking, preheat your oven to 200 degrees Celsius and grease 2 ovenproof dishes with a drizzle of oil or butter.

Now roughly chop the spinach and ham before dividing it equally and placing it into your baking dishes. Crack two eggs on top and then season with a pinch of salt and pepper. Oven bake for 10 minutes – or until the eggs are done to your liking – and enjoy!


2) Spicy tomato baked eggs

For 2 Servings, You’ll Need:

This recipe is slightly more time consuming, but if you’re not in too much of a rush, we guarantee it’ll be worth every second!

Before you get started, preheat the oven to 200 degrees Celsius and grease two ovenproof dishes with a drizzle of oil or butter.

Now, grab yourself a frying pan and add the onion, red chilli, crushed garlic and coriander stalks, heating for roughly 5 minutes - or until soft. Next up, pour in the tomatoes and sugar and leave to bubble for 10 minutes.

Divide the mixture evenly into your greased dishes and then crack in the eggs. Place in your pre-heated oven for roughly 10 minutes – or until the eggs are cooked to perfection (whatever that means to you). Serve with the chopped coriander leaves scattered on top and enjoy!

3) Cheesy mushroom baked eggs

For 2 Servings, You’ll Need:

If you want to make this lower in calories, simply substitute your cheddar for mozzarella.

First of all, preheat the oven to 200 degrees Celsius and grease 2 ovenproof dishes with a drizzle of oil or butter.

Now, grab yourself a frying pan and add the sliced mushrooms and crushed garlic. Heat through for roughly 5 minutes before adding the thyme leaves. Now fry for a further minute.

Divide the mixture evenly between your two dishes, sprinkle both with cheese and then add the eggs. Bake for roughly 10 minutes – or until the eggs are cooked to your liking. Serve & enjoy!

Each of these recipes can be enjoyed alone or can be served alongside some crusty bread or fluffy pita.
